Jules’ Diner – Grilled Tequila Lime Tilapia

I found this recipe a few weeks ago and made a few of my typical changes. This was the final result and a big hit with Everyday Daddy. I like to serve this on bibb lettuce with lemon cilantro rice. That recipe next week!

Grilled Tequila Lime Tilapia

4 tilapia fillets

4 tbsp olive oil
2 tbsp lime juice
1 tsp hot sauce
1 tsp basil, dried
2 tbsp tequila
House Seasoning

Combine the marinade ingredients in a ziplock bag. Squish the bag to mix and add the fillets. Toss in the fridge for half an hour. Oil and preheat the grill. Remove fillets from bag and pour marinade into a saucepan. Bring marinade to a low simmer and reduce for 5 minutes.

Grill fillets 3 minutes per side over a medium heat. Serve with a few spoonfuls of marinade drizzled over top on a bed of bibb lettuce.
