Jules’ Diner – Sweet & Sour Cabbage

The older I get the more frugal I become…or, maybe I’ve just learned to appreciate simple things.
Thus my fondness for affordable, flavorful side-dishes like Sweet & Sour Cabbage. It’s quick, easy and über affordable and even better the next day.
Sweet & Sour Cabbage

½ head red cabbage, cored and sliced thin (green works fine as well)
2 tbsp olive oil
House seasoning (equal parts kosher salt, black pepper & granulated garlic)

1/2 cup apple juice or apple cider

2-3 tbsp sugar (to taste)
2 tbsp cider vinegar
1/4 cup golden raisins
Dash cayenne pepper
Dash cinnamon-optional
1.  Preheat a large skillet over medium heat, add olive oil and cabbage. Saute’ until tender, about 10 minutes. Season with house seasoning. 
2.  Add apple juice, sugar, vinegar & raisins. Stir to combine and reduce heat to medium-low. Simmer until liquid is reduced. Taste and adjust sweetness as desired.
3.  Add cayenne and cinnamon, if desired.  Stir to combine.  Serve hot.
