Jules’ Diner – Aunt Gert’s Pancakes

Put down that box! Why make heavy, doughy waffles & pancakes from a mix when you can have light and fluffy ones in no time flat?

Make Aunt Gert’s Swedish pancake & waffle batter instead.  Trust me.

This one’s for you, Suzanne!

Aunt Gert’s Swedish Pancakes -or- Waffles

1 egg
1 cup milk
1 tsp vanilla extract
2 tbsp vegetable oil
1 cup flour
1/2 tsp salt
1 tbsp (yes, tablespoons) baking powder
2 tbsp sugar

1.  In a mixing bowl, whisk together egg, milk, vanilla and oil.

2.  Sift dry ingredients and add to bowl.  Mix until smooth.

3.  Lightly grease a griddle or waffle iron and bake till golden.
