Today I’m making something that I grew up with. A family favorite that we called Poor Man’s Ham Salad.
It’s great for cool, summertime sandwiches and I’m sure that your kids will love it. Richie gobbles it up every time I make it. It’s also easy on the budget -and- easy to make.
Jules’ Poor Man’s Ham Salad
2 lbs bologna
1/2 cup pickle relish
3 hard boiled eggs, minced
1/2 cup mayonnaise -or- to desired consistency
Salt & pepper to taste
Dash cayenne pepper or hot sauce (optional)
1. Peel the rind from the bologna and slice into large chunks. Place in your food processor and pulse until the bologna is a ground consistency. Don’t over process or it will become pasty. If you have a grinder use it instead.
2. In medium mixing bowl blend together pickle relish, eggs, mayo, salt & pepper and cayenne if desired. Add ground bologna and mix well.
3. Serve on toast or enjoy on crackers.
