Jules’ Diner – Braised Green Beans

Southern Braised Green Beans

4-6 slices bacon, diced
1 large sweet yellow onion, diced
1/8 cup apple cider vinegar
1/4 cup white sugar
1 teaspoon minced garlic
Kosher salt and ground black pepper to taste
1 dash cayenne pepper
3 cups chicken stock
6 cups cut fresh green beans or frozen green beans
*Note: I simply fill the stock pot almost to the rim with green beans. They cook down quite a bit. 

1. Heat a large pot over medium heat. Render bacon till crisp, about 7 to 10 minutes. Add onion; sauté until tender, about 5 to 7 minutes.

2. Add vinegar, sugar and garlic to the bacon and onion mixture; season with salt and pepper to taste. Reduce heat to low and simmer gently for 5 minutes.

3. Add chicken stock to the pot and stir; bring to low boil.

4. Add the green beans to the pot, tossing to coat. 

5.  Cover the pot, reduce the heat and let the green beans simmer until tender. They can simmer on very low heat for an hour or more.
