Southern Braised Green Beans
4-6 slices bacon, diced
1 large sweet yellow onion, diced
1/8 cup apple cider vinegar
1/4 cup white sugar
1 teaspoon minced garlic
Kosher salt and ground black pepper to taste
1 dash cayenne pepper
3 cups chicken stock
6 cups cut fresh green beans or frozen green beans
*Note: I simply fill the stock pot almost to the rim with green beans. They cook down quite a bit.
1. Heat a large pot over medium heat. Render bacon till crisp, about 7 to 10 minutes. Add onion; sauté until tender, about 5 to 7 minutes.
2. Add vinegar, sugar and garlic to the bacon and onion mixture; season with salt and pepper to taste. Reduce heat to low and simmer gently for 5 minutes.
3. Add chicken stock to the pot and stir; bring to low boil.
