Jules’ Diner – Aunt Helen’s Peach Cobbler

Summer is the time for peach cobbler.  This recipe comes from my great aunt Helen.  I’ve tried a lot of cobbler recipes, but this one is the best.

Aunt Helen’s Peach Cobbler

3/4 cup sugar
3 tbsp butter
1 tsp baking powder
1/4 tsp salt
1 cup flour
1/2 cup milk
4-5 cups sliced peaches (frozen works well, too)

1 cup sugar
2 tbsp corn starch
2/3 cup boiling water

Mix first six ingredients with pastry cutter as if making a pie crust. Batter will be sticky. Place sliced peaches in the bottom of an 8×8 pan. Evenly spread batter over fruit. Mix sugar and corn starch. Sprinkle evenly over top. Pour boiling water over all. Bake at 375 degrees for 1 hour.

This works equally well with all kinds of fruit, fresh or frozen.
