Jules’ Diner – Soft Boiled Eggs

I always need a little protein to start the day and soft-boiled eggs are a quick, easy and delicious breakfast.

Here’s how they’re done…

SOFT-BOILED EGGS

Eggs (as many as you like)
Water

Put 1/2″ to 3/4″ of water in a small sauce pan. Place the lid on and bring water to a boil.

Using a large spoon, gently set the eggs in the water and reduce the heat just a bit.  Cover and let water boil for six to seven minutes.  There will be steam and this is what cooks the egg.

Remove from pan and rinse under cold water until just cool to the touch.  Peel gently and enjoy.
