Jules Diner – St Louis Style Oven Ribs

I really love…ribs. BBQ’d or oven-roasted, the flavor imparted when meat is cooked on the bone is incomparable. And, while I do have a real BBQ smoker, sometimes I like the ease and convenience of ribs from the oven.

This is my recipe for Sticky Ribs adapted from Nigel Slater’s recipe. It will make your family and friends think you’re a BBQ genius.

JULES’ STICKY ST LOUIS STYLE RIBS

2 slaps St Louis-style pork ribs
1/4 cup honey
3 heaping tbsp your favorite BBQ sauce (for bottled sauce I prefer Sweet Baby Rays)
1 tsp granulated garlic
1 tsp crushed red pepper flakes
1/2 tsp kosher salt
1/4 tsp black pepper

Slice the slabs of ribs into individual rib sections, or “riblets”. I prefer St Louis-style ribs because they’re more meaty, but any pork rib will work.

In the bottom of a shallow roasting pan mix together the honey, BBQ sauce, granulated garlic, crushed red pepper flakes, kosher salt and black pepper.

Place the riblets into the sauce and toss them with your hands until they’re well coated. Cover the pan with foil or waxed paper and let marinate for 4-6 hours.

Preheat the oven to 325º and roast the ribs, uncovered, for 90 minutes.

Serve with baked beans and potato salad…of course!
