WOW! Just made my first attempt at creating a low-carb “frosting” and Hubs is RAVING about the results. It’s fluffy, creamy and not too sweet. Here’s what I did…
JULES’ LOW-CARB CREAM CHEESE FROSTING
8oz package of cream cheese, softened
1/4 cup of Xylitol, extra-fine (see below)
1 tbsp melted butter
1 tsp coconut extract, or vanilla or flavor your choice
2 tbsp heavy cream or half & half
• For extra fine xylitol process it for 2-3 minutes in a food processor or until it is very fine and a bit powdery. I used this in place of confectioners sugar.
• In a medium mixing bowl cream the softened cream cheese with a hand mixer. Add the Xylitol and mix well until combined.
• Add the melted butter and extract or flavoring of your choice and keep mixing.
• Lastly, add 1-2 tbsp of heavy cream until frosting reaches desired consistency.
This is SO versatile! Mix up the flavorings. Add a bit of cocoa. Try some orange or lemon zest! DaVinci Sugar-Free syrups have incredible flavors that would work beautifully!
