Jules’ Diner – Low Carb Poppy Seed Dressing

¼ cup apple cider vinegar
½ cup Swerve® Granular (erythritol)
½ tsp kosher salt
½ tsp freshly ground black pepper
½ tsp turmeric
1 tsp dry mustard (I prefer Colman’s)
1 garlic clove, finely minced
¼ cup red onion or 1 shallot, finely minced
1 tbsp poppy seeds
1 cup olive oil

• Place everything into a blender with the exception of the olive oil. Then slowly drizzle in the oil on low speed.
