Eating better…errrr…eating butter!
If you’re spending $5-$6 for a large tub of spreadable butter…butter that’s blended with Canola oil so that it has a softer consistency…you can save some green by making your own. It’s super simple and will cost about half as much as store-bought.
• 4 sticks of your favorite butter, salted or unsalted, whichever you prefer
• 1/3 cup of extra light olive oil
Allow the butter to come to room temperature. It should be just warm enough to be squeezable, not melted.
Place the butter into the bowl of a stand-mixer and cream until a bit fluffy, about 2 minutes. Add the olive oil and blend until combined, about another minute. Scrape down the sides of the bowl with a spatula to make sure the mixture is completely blended.
Transfer to a small, sealable container and refrigerate.
