Quick & Easy Taco Salad

This is one of hubby’s favorites and it’s easy and quick.

Ingredients

1 lb ground beef
1/8 cup of taco seasoning (I make my own, but you can use pre-packaged. See below for my recipe.) 1 can chili beans
Tortilla chips

Toppings

Lettuce
Shredded cheddar cheese
Black olives
Salsa
Sour cream

• Brown the ground beef till no pink remains and then drain off excess fat. Sprinkle 2-3 heaping tablespoons (or to taste) of taco seasoning over the beef and combine. Reduce heat to low.

• Add the can of chili beans to the ground beef and combine. Simmer on low for 4-5 minutes or until warmed through.

• Place a layer of tortilla chips in a bowl and crush slightly. Top with shredded lettuce, a large spoonful of ground beef and bean mixture, cheese, olives, salsa and a dollop of sour cream.

Jules’ Taco Seasoning Mix

2 tbsp chili powder
1 tbsp kosher salt
1/2 tsp black pepper
2 tsp granulated garlic
1/4 tsp red pepper flakes
1 tsp sweet paprika
2 tsp ground cumin
1/2 tsp unsweetened cocoa powder

Blend well and store in small Mason jar.
